Hoe Nam Prawn Noodles (Night)

Hoe Nam Prawn noodles has been located at their current place for the past decade selling mainly Prawn noodles. There're 2 operations AM / PM,  some says the AM/PM stalls are siblings which I think so too as the stall holders looked pretty much alike. 

The day stall is managed by mainly ladies and their soup is filled with Prawn taste, smell & thick essence of the prawns. Their ingredients are fresh and the springy bite feel of their prawns makes all the waiting worthy. It's a must try stall if you are around Macpherson area, but do prep yourself for at least 20mins of wait.

Coming to the PM stall, the ingredients are as fresh. The Prawn are Sweet and springy & the pork ribs are tender and soft that the rib bone detached itself with a slight pull, the juice of the pork coupled with the soup, just oozed and fill your taste bud.

The downside of the PM stall is on their soup.... I just named it "Diabetes Soup", thick looking soup which seems to be filled with all the essence Until you sipped it in. Very slight prawn taste but all you would tasted is the overwhelming sugary taste of sugar that fills you with lots of sweetness. To make things worst, the uncle who is doing the cooking, changes his gloves just to take his smoking  break with his New gloves.... OMG!  He comes back into his boiler and starts grabbing the ingredients and noodles with his tar filled gloves..! Too bad for the 3 air force guys ahead of me.....
Their so-called "Big Prawn" are about the size of "Medium " that you would see in Giant. Which  I feel a little cheated on this matter.  You should see other yourself to believe.

But a word of fairness is that both their ingredients are fresh and their noodles are cooked to perfection. Other than the soup and hygiene difference the rest are pretty OK.

Do try both the stalls to have a better  understanding of the dish. 

I would recommend the AM stall instead if you Really wanna try.
